History

Edomae sushi originated in Tokyo (formerly Edo) and has a history spanning over 200 years. Initially, sushi became widespread as a method of preserving fish that would not last long.

Edo, being close to Tokyo Bay, enabled the consumption of freshly caught seafood, leading to the creation of the present-day style of nigiri sushi that can be enjoyed instantly. The essence of Edomae sushi lies in the skilled techniques of the sushi chefs and the flavors that highlight seasonal ingredients.

Characteristic

A significant feature of Edomae sushi is its use of fresh seafood caught in Tokyo Bay and the surrounding waters. The variety of seafood caught around Tokyo Bay changes with the seasons, allowing Edomae sushi to offer the best flavors suitable for each period.

Additionally, there are unique techniques involved in the balance of the vinegared rice (shari) and the handling of the fish. The finest Edomae sushi is created when a skilled sushi chef combines all these elements.

Traditional Craftsmanship

Sushi chefs perform the optimal preparation according to the type of fish:
"yubiki (briefly boiling and chilling)," "marinating," "searing," "boiling," "kombu-jime (kelp wrapping)," and "vinegar or salt curing."

These advanced techniques bring out the flavors of the ingredients, resulting in the creation of the finest piece of sushi. This skill is a result of rigorous training unique to experienced chefs, captivating not only those who watch but also those who taste, providing a profound experience.
